Meaning “unity” in Spanish, it’s no secret that La Unión beautifully integrates optimal terroir and meticulous washed processing to create a coffee of delicious repute. Pacamara is a vigorous variety that thrives in Huehuetenango’s temperature climate and plentiful rainfall. Producer Carlos Rivas then developed the bean’s clean profile and juicy flavours on the farm’s wet mill, leaving it to pre-ferment for 24 hours before pulping and undergoing double-fermentation. This leaves the coffee with peppy red fruit notes of strawberry and pomegranate.
